Super Food Waffles

Waffles are definitely a super food in my opinion!  Especially when they’re made with super stars like maca, flax, chia and zucchini.  Do yourself a favor and purchase a small inexpensive waffle iron and start makin magic.  It’s way easier than pancakes because you don’t have to worry about flipping / falling apart / blah blah blah.  Just let the waffle iron do it’s thing and you will end up with a big stack of super food goodness.

Super Food Waffles

Ingredients

3 Tbsp Cassava Flour

1 Tbsp Maca Powder

1 Tbsp Ground Flax Seed

1 Tbsp Chia Seed

1/2 – 3/4 Cup Zucchini, shredded

2 Full Eggs

1 Egg White

½ Tsp vanilla

½ Tsp Cinnamon

Method

Place all dry ingredients in a small to medium mixing bowl

Add eggs, mix with a whisk of hand held mixer

Fold in shredded zucchini

Warm up waffle iron to low-medium, use a small amount of coconut oil or ghee to prevent sticking

Spoon mix onto the waffle iron to desired size, allow to cook until golden brown

Top with organic grass feed ghee, butter, nut butter, raw Manuka honey or fresh berries!
